Vegetable Fried Rice

This delicious fried rice is simple and easy to make. The vegetables listed are just suggestions, so don’t be afraid to mix it up with different kinds to suit your tastes. Other vegetables that work well are corn, peas, green onions, mushrooms, and zucchini. Sprouts are more traditional, however in a pinch I like to use shredded cabbage cooked to just crisp-tender, since the crunch is similar.

Vegetable Fried Rice:         

  • 1 1/2 C cooked, day-old white rice (jasmine rice works well)
  • 2 medium eggs, beaten
  • 1/3 C finely shredded cabbage
  • 1/4 C carrot, diced
  • 1/4 C broccoli, cut into small pieces
  • 2 Tbsp. chopped onion
  • 2 Sm. cloves garlic, minced
  • 2 Tbsp. Soy sauce

Makes 2-3 servings

Start by sauteing the diced carrot in a little bit of butter or oil. After 2-3 minutes, add the garlic, onion, and broccoli. Saute another 2 minutes, then add the cabbage. Cook until cabbage is just crisp-tender, about 2 minutes. Remove the vegetables from the pan and set aside.

Begin frying rice in a little bit of oil or butter. When heated through, add soy sauce and stir thoroughly. Push rice to the sides of the pan and cook the beaten eggs, stirring until cooked. Mix cooked egg into rice and add vegetables. Stir to combine.
