Cabbage and Noodles

             This humble yet delicious dish was a staple growing up in my home- passed down through my mom’s Hungarian side of the family. It’s comprised of nothing more than buttery stir-fried cabbage tossed with pasta- a quick and easy comfort food that was included in every holiday dinner at my grandfather’s house. Yes, its cabbage. Yes, its noodles. Not very fancy. But hey, sometimes you just want something simple that tastes good, and that’s exactly what this dish is!

Cabbage and Noodles:

  • 1/2 medium head of cabbage, shredded
  • 1 lb pasta (egg noodles, rotini or campanelle work well)
  • 1 stick butter
  • salt, to taste

Cook pasta to desired doneness, preferably slightly al dente. Drain, and set aside.

Over medium heat in a large pot, melt butter and add cabbage. Cook, stirring constantly, until the cabbage becomes crisp-tender. Remove from heat, stir in pasta. Add salt to taste.

Makes a large, family-sized pot, about 8 servings. Recipe can easily be cut in half.
