These wonderful cookies are amazing fresh from the oven when they are still warm and the chocolate is melty. Better than plain old chocolate chip cookies, they contain a boost of fiber and protein from the oats, not to mention a delicious chew. These cookies pair extremely well with strong coffee or tea!
Ooey-Gooey Oatmeal Chocolate Chip Cookies:
- 1 1/2 C all-purpose flour
- 2 C oats
- 3/4 C packed brown sugar
- 1 C butter, softened
- 1 tsp. Vanilla
- 1 egg
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 C semi-sweet chocolate chips
- 1 C chopped nuts (optional – I like to use walnuts)
Preheat oven to 350 F. In a large bowl, beat brown sugar, butter, vanilla, and egg with electric mixer on medium speed until well blended, or mix with spoon.
In separate bowl, mix oats, flour, baking soda, and salt, stirring well. Slowly add dry ingredients into sugar mixture. Mix until combined. Stir in chocolate chips and nuts.
On ungreased cookie sheets, drop dough by rounded tablespoonfuls, about 2 inches apart.
Bake 9-11 minutes, or until golden brown. Cool slightly, remove from cookie sheets to cooling racks.
Makes about 3 dozen cookies.
