Home-style noodle soup

Re-use of images is fine, but those who do should link back to this post.

Just like mom used to make! This soup is soothing and delicious- think chicken noodle soup without the chicken. A nice way to lighten up your dinners after a heavy thanksgiving feast.

Home-style noodle soup

  • 1 T olive oil
  • 1/2 tsp. thyme
  • 1 large onion, chopped
  • 2 medium carrots, chopped
  • 1 celery stalk, chopped
  • 2-3 cloves garlic, minced
  • 6 cups vegetable stock
  • 2/3 C pasta (broken spaghetti or fettuccini work well)
  • salt, pepper to taste

Heat oil in a large saucepan. Add onion, carrots, celery and thyme. Cook over medium heat for 5 minutes, until vegetables become soft.

Add remaining ingredients and simmer for 10-15 minutes, until the pasta is cooked through.
