This soup is not only delicious, it’s also a snap to make! Just 5 ingredients go into this healthy, home-made tomato soup that takes only a few minutes longer to serve than it’s canned cousin -and believe me, it’s worth the extra effort!
Classic Tomato Soup Recipe – Serves 4
- 2 T butter
- 1 medium onion, chopped
- 1 can (28 oz) diced tomatoes
- 1 1/2 C vegetable stock
- 1/3 C cream
In a large soup pot, heat butter until melted. Add onion and cook until translucent and tender. Add tomatoes and vegetable stock. Bring to a near-boil, then reduce to simmer for 15 minutes.
Blend with a stick blender, or transfer in small batches to blender and puree till smooth. If desired, strain to remove any tomato seeds.
Return soup to pot and stir in cream.
Season with salt and pepper to taste before serving.
