Fast & Easy Vegan Sloppy Joes

This is a really great recipe to whip up in a pinch, taking only about 15 minutes from start to finish, and is much lower in fat and calories than it’s meat-based cousin. Who doesn’t love sloppy joes?

Fast & Easy Vegan Sloppy Joes – Makes 4 lg sandwiches

  • 2 T oil
  • 1 lb white button or crimini mushrooms
  • 1 15oz can sloppy joe sauce
  • 4 deli or hamburger style rolls

Start by cleaning the mushrooms, either rinsing under cold water or wiping with a damp cloth. Quarter mushrooms and place in a food processor. Pulse until you get small chunks, like picture below:

Don’t over process, you want the texture to be there after the mushrooms have cooked down a bit.

Heat a skillet over medium heat and add oil. Add mushrooms and cook 4-5 minutes, stirring occasionally. They should release a lot of moisture into the pan, just keep cooking until the liquids dry up and the mushrooms begin to darken.

Add sauce into the mushrooms and continue to cook another 2-3 minutes, or until the sauce thickens and sticks well to the mushrooms. Spoon mixture into the rolls; should make about 4 large sandwiches.
