There’s nothing like a warm fruit crisp to brighten up your evening- especially if you top it off with some melty vanilla ice cream. This recipe is made up of a blend of tart apples and sweet pears, and topped with a crunchy-chewy layer of toasted oats and pecans, and sweetened with Yacon syrup, a natural sweetener and weight loss aid (or you could just use honey- but where’s the fun in that?!)
Pear-Apple Crisp with Pecan and Oat Topping – serves 6
- 2 Lg tart apples (such as granny smith), cored and sliced thin
- 3 Lg pears, cored and sliced thin
- 1/4 C Yacon syrup (could also use sugar or honey)
- 2 T flour (to thicken juices)
- pinch of salt
In a large mixing bowl, combine all ingredients. Place into a greased 8″ square baking dish, and prepare topping as described below:
For the crisp:
- 1 C rolled oats
- 2 T flour
- 1/2 tsp. cinnamon
- 1 tsp. ginger
- 4 T butter, melted
- 1/3 C Yacon syrup (or honey)
- 1/2 C chopped pecans (optional)
Combine all ingredients and spread evenly on top of the fruit.
Bake at 400 degrees f for 25-30 minutes.
Note – If fruit is not ripe enough, it may take longer to cook. Just cover with foil to prevent over-browning and continue to cook until fruit is fork tender.
Serve warm with ice cream, if desired.
