I know I sure do! For me, the pinnacle of late-night snacking is a fresh, good quality jam spread on homemade grain toast. Simple, crunchy, and sweet. Mmmm.

Sadly, all too often those store-bought jams can be a stew-pot of all things bad for you. When I heard that the folks over at Tiger Nuts USA wanted me to review their product, I was really excited. First of all, I had never heard of tiger nuts before and was curious to see what they were like. And secondly, they sounded like a pretty healthy and vegan-friendly snack – something I’m always on the lookout for.

I found this recipe on www.vegetariantimes.com and just had to give it a try. Originally vegan, I switched out the dairy substitutes for real dairy ingredients (don’t hate me!), and even though it calls for a lot of rise time, they were impressively easy to make- not to mention delicious! I can’t think of a better way to use up any leftover sweet potato you might have from Thanksgiving.
